Abstract
:
This investigation was conducted to study the effect of camel milk purchasing locations, time of collecting the milk samples and storage periods on the microbiological and chemical quality of camel milk. The main results showed that the milk fat content ranged from 3.67% in the Quwaizah location in January to 0.79% in June. Milk protein content ranged from 3.67% in the Asfan location during March to 1.87% in the same month from the Stream Canal location. Ash contents ranged from 1.50% in the milk of the Quwaizah location during January to 0.60% in the Stream Canal location during November. Stored camel milk for 6 hr. led to the highest number of the total viable count in all locations and all months. Salmonella count was the highest one in the milk of August (817 cfu (colony forming unit)/ml) in Halaga Ghanam location, while the milk of December without storage had zero cfu/ml of Salmonella in Asfan and Stream Canal locations. The highest count of Staphylococci (18070 cfu/ml) was found in the milk of Halaga Ghanam location in August under storage period of 6 hr. followed by July with storage conditions (14830 cfu/ml) in Quwaizah location, while the lowest count was found in the fresh milk of December (87 cfu/ml) in Quwaizah location. Milk of August stored for 6 hr. had the highest count of total coliform (6833 cfu/ml) in Stream Canal location followed by July (6700 cfu/ml) in Asfan location. The lowest count was found in the fresh milk of November (0.00 cfu/ml) Stream Canal location and December (10 cfu/ml) in Stream Canal location. The highest count of fecal coliform found under 6 hr. storage in June (4930 cfu/ml) in Quwaizah location followed by August (4800 cfu/ml) from Quwaizah location while the lowest values were found in the fresh milk of November (0.00 cfu/ml) and December (3 cfu/ml) in Stream Canal location. Concerning yeast and molds, the highest values were found in the milk after 6 hr. storage in August (7340 cfu/ml) in Halaga Ghanam location followed by July (6800 cfu/ml) in Stream Canal location and the lowest values were found in the fresh milk of November (27 cfu/ml) in Stream Canal location and February (70 cfu/ml) in Quwaizah location. Lead concentrations in the camel milk ranged from 0.828 mg/l in the Asfan location in August to 0.147 mg/l in the Halaga Ghanam location during February. Cadmium concentrations ranged from 0.039 mg/l in the Halaga Ghanam location in February to 0.0117 mg/l in the Stream Canal location during December. The lead and cadmium concentrations were more than the Saudi and international standards. Chromium ranged from 0.458 mg/l to 0.122 mg/l in the Stream Canal location of August and December, respectively. Also, the Stream Canal location milk had the highest copper concentration in May (0.239 mg/l) and also had the lowest value (0.033 mg/l) in April. The Asfan location in June milk had the highest Iron concentration (0.337 mg/l) and the milk of Stream Canal location in March had the lowest value (0.067 mg/l). Zink ranged from 0.5203 mg/l in the milk of Stream Canal location in May to 0.0031 mg/l in the milk of Halaga Ghanam location during February. The chromium, copper, iron and zinc concentrations in the camel milk were less than the standards.
